This May and June, Scarlett Bangkok and Ginett Singapore updates its rotation of bimonthly seasonal specials to star these humble, delicious spears, with 7 dishes dedicated to the French Asparagus. Beloved for their earthy, bittersweet notes and versatility, the French Asparagus gets prepared in a variety of European-style cooking techniques and flavours – ranging from classic to contemporary.
A Taste of Spring in the Heart of Bangkok and Singapore
Classic combinations include the Asparagus & Parmesan and Asparagus Mousseline. The former sees the asparagus oven-baked until crisp, then garnished with nutty, savoury parmesan cheese, while the latter highlights the elegant sweetness of white asparagus with a dreamy mousseline sauce.
Of course, no asparagus menu can be complete without the traditional Asparagus à la Flamande, where white asparagus gets topped off with soft boiled eggs, lemon, and fresh parsley.
From the grill, Charcoal-Grilled White Asparagus gets the smokey treatment, paired with a velvety herb aioli.
For a more modern take, the Asparagus Espuma & Salmon features a cloud of asparagus and smoked salmon, finished with an unctuous poached egg. An Asparagus & Hummus Salad gets a hint of Asian influence, with white asparagus and romaine lettuce served up with refreshing yoghurt and an indulgent, aromatic black sesame hummus.
Probably the heartiest dish on the menu is the Chicken Truffle Supreme & Asparagus, where the asparagus is married with juicy, tender chicken breast. Combined with Paris mushrooms, then draped with a velvety truffle supreme sauce.
